Chicken Adobo with IBARRA'S Chili Garlic
Prep Time: 10 min (plus marinating)
Cook Time: 35–40 min
Serves: 4–5
Description
A Filipino classic made even bolder with Ibarra’s Chili Garlic. Tender chicken simmered in a savory, tangy soy sauce and vinegar mix with garlic, bay leaves, and peppercorns. Finished with a spicy kick, it’s perfect with a big serving of warm rice.
Ingredients
-
2 lbs chicken (thighs or drumsticks)
-
½ cup soy sauce
-
½ cup vinegar
-
1 cup water
-
6 cloves garlic, crushed
-
2–3 tbsp Ibarra’s Chili Garlic (adjust to your heat preference)
-
2–3 bay leaves
-
1 tsp whole peppercorns
-
1 tbsp cooking oil
-
Optional: 1 small onion, sliced for extra sweetness
Instructions
-
In a bowl, combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Marinate for at least 30 minutes (overnight is best).
-
Heat oil in a pan, then sear chicken pieces until lightly browned.
-
Pour in the marinade along with water. Bring to a boil, then lower heat and simmer uncovered for 25–30 minutes, or until chicken is tender and sauce is reduced.
-
Stir in Ibarra’s Chili Garlic and simmer for another 2–3 minutes.
-
Serve hot with plenty of steamed rice.
💡 Tip: For a richer flavor, marinate chicken overnight and reduce the sauce until slightly thick before serving.
