Chicken Adobo with IBARRA'S Chili Garlic

Prep Time: 10 min (plus marinating)
Cook Time: 35–40 min
Serves: 4–5

Description

A Filipino classic made even bolder with Ibarra’s Chili Garlic. Tender chicken simmered in a savory, tangy soy sauce and vinegar mix with garlic, bay leaves, and peppercorns. Finished with a spicy kick, it’s perfect with a big serving of warm rice.

Ingredients

  • 2 lbs chicken (thighs or drumsticks)

  • ½ cup soy sauce

  • ½ cup vinegar

  • 1 cup water

  • 6 cloves garlic, crushed

  • 2–3 tbsp Ibarra’s Chili Garlic (adjust to your heat preference)

  • 2–3 bay leaves

  • 1 tsp whole peppercorns

  • 1 tbsp cooking oil

  • Optional: 1 small onion, sliced for extra sweetness

Instructions

  1. In a bowl, combine chicken, soy sauce, vinegar, garlic, bay leaves, and peppercorns. Marinate for at least 30 minutes (overnight is best).

  2. Heat oil in a pan, then sear chicken pieces until lightly browned.

  3. Pour in the marinade along with water. Bring to a boil, then lower heat and simmer uncovered for 25–30 minutes, or until chicken is tender and sauce is reduced.

  4. Stir in Ibarra’s Chili Garlic and simmer for another 2–3 minutes.

  5. Serve hot with plenty of steamed rice.

💡 Tip: For a richer flavor, marinate chicken overnight and reduce the sauce until slightly thick before serving.
